What happens at the still

11:00Arrive

Pier welcome

Coffee, salt, sourdough

Coffee on the pier deck with a small plate of our salt over warm sourdough. Meet the distiller and the rest of the group. Coats and bags stowed.

11:20Distillery floor

The copper-pot demo

Three runs explained

Walk the distillery floor. Touch the copper. See the active still on the heads run, hear the cuts being called, taste the heart pour straight off the spirit safe.

11:50Botanical room

The botanical room

Smell each of fourteen

Twenty minutes in the botanical room with sealed jars of every input — Macedonian juniper, Sicilian peel, Cape Mendell salt — smelled and explained one by one.

12:15Tasting

Three batches, side-by-side

N° 22, 23, 24 — vertical

Three current batches tasted side-by-side at the copper bar. Most-asked-for moment of the tour — small differences in salt year and juniper crop become very obvious very fast.

12:50Take-home

Sign & take a bottle

Hand-numbered, included

Each visitor takes home one 700ml bottle of N° 24, signed by the distiller during the visit. Worth $58 — included in your $95.

N° 01

The take-home

700ml of N° 24

One signed bottle of the current batch, included in price. Pre-wrapped, ready to carry off the pier.

N° 02

Three-batch tasting

A vertical comparison

Side-by-side pours of three batches. The clearest way to taste how the salt changes year-over-year.

N° 03

Pier coffee & salt

Sourdough, butter, salt

Coffee and a small bread plate when you arrive. Sourdough from the bakery upstairs, our salt on top.

N° 04

The distiller's note

Hand-written tasting card

A printed batch card signed by the distiller, with notes on yield, salt date, and a tasting record.
