A six-month-old
roastery, with
twenty years of
practice behind it.

Maren and Joaquín had been pulling shots in other people's bars since 2005. They opened Your Business in October 2025 with a 1962 Probat L12, a green-bean cellar in the basement, and three rules: roast Mondays only, no bag older than fourteen days on the shelf, and never sell a coffee whose farmer they couldn't name.

Today the team is six people and three rooms. The Probat still runs Monday at 6am. The bag in your hand was green coffee on Sunday. We answer the phone — (828) 555-0142 — and we'll tell you exactly where it grew.

Source

We buy direct from twelve farms across Ethiopia, Colombia, Guatemala, Sumatra, and Honduras. We've been to nine of them.

Roast

Six pounds at a time on the Probat, every Monday between 6am and noon. Profile-cupped Tuesday morning before any bag ships.

Bag

Hand-bagged Tuesday afternoon in a one-way valve pouch. The roast date is stamped — not printed — on the bottom seam.

04

Ship

Out the door Tuesday by 4pm. On your kitchen counter Wednesday or Thursday. Drinking like itself by Friday.
