Three cafes, all within five miles of the Probat. Same beans, slightly different rooms — one for the morning rush, one for the slow pour-over hour, one for the river view. We answer the phone at every location.
The roastery is here. Twelve seats at a marble bar, five at a long communal table, and the 1962 Probat L12 visible behind the espresso machine. The Monday roast happens in front of you between 6am and noon. We will bring you a cup while you watch.
Ethiopia Guji Hambela — bergamot, white peach, jasmine
~ Brewed on V60 · $5.50 · single cup ~Pour-over only. No espresso machine. Eighteen seats, exposed brick, the same Mahler record on at noon every Tuesday. The slow bar — where you order, sit, and the cup arrives in three minutes carrying a hand-written brew card. Dog-friendly patio.
Colombia Inza Tolima — milk chocolate, brown sugar, plum
~ Brewed on Kalita Wave · $5.50 · single cup ~Our biggest room — 38 seats, 22-foot ceilings, a wall of warehouse windows facing the French Broad. Full espresso. Pastries from Old North Bakery next door, delivered by foot at 6:45 every morning. Two laptop tables and seven that aren't, on purpose.
Guatemala Concepción Huista — toasted almond, dark cherry, raw honey
~ Brewed on Chemex · $6 · two cups ~We sell whole-bean wholesale to fourteen restaurants and seven cafes across western North Carolina. We also rent the Lexington back room for private events of up to 24 — book club, retirement party, whatever you've got.
